After four weeks, the Everclear has turned very yellow. I opened it for the first time – it smells fantastic, but tastes really strong.
Make simple syrup by adding 3 lbs. sugar into 1.5 liters of water. Let the mixture simmer for 15 minutes. Then cool it so that oty is room temperature.
Strain the alcohol from the rinds and particles using a very fine sieve or cloth.
Add the alcohol to the cooled simple syrup and then bottle (I used mason jars).
All that is left to do is chill, and enjoy.
