Easiest, tastiest, fastest salmon recipe I know

Thanks to Sara Moulton who first published this recipe, over the year’s I have made modifications to make it easier to prepare, infuse fresh citrus flavors and have time to focus on other things while it cooks.  Sealing it in a piece of foil allows the salmon to cook and keep all the juices.  I do like cooking it slightly under so that it is not over-cooked.

Step 1
– Wash and pat dry a fresh piece of salmon
– Place on a piece of large tin foil
– Add a tablespoon (or more) of olive oil over the salmon
– Squeeze a lemon or very juicy lime over the salmon
– Add salt and pepper to taste
– Seal the foil on all three sides tightly

Step 2:
– Place into an oven at 350 degrees
– Cook for 20 minutes a pound
